Is there a way to purchase and use crypto 100% anonymously without having to scan your ID, etc?

Downloaded Coinbase to buy USDT but I'm kinda spooked that it's asking for my SS and ID card and all this personal information. Peptides are grey market after all and I have a job that requires discretion.

Also dumb question but if vendor accepts ERC20 does that mean I can use Tether (USDT) on Coinbase? Or Ethereum (ETH)?

You'll need a tiny amount of ETH coin itself because ETH network charges a fee to use their network to send USDT. Buy $3 ETH and whatever amount of USDT later on CB. Then get Trust wallet or similar to send on chain to your own wallet. Trust is your "gangsta" wallet which you will use to pay the vendor.
 
My biggest mistake was buying crypto directly in Exodus via exchanges. Exodus doesn’t require your personal information, but exchanges do. With KYC, they can report every transaction linked to your identity to the tax authorities. Now I’m stuck trying to figure out how to report my crypto activities. It was only one transaction with no gains or losses, but I still need to report it to stay compliant. Tax reporting for crypto is a headache.

Ask your vendor what ERC20 token they accept.

Not to be rude but did you even try doing research?
Plenty of nonkyc spaces exist. Go to any bitcoin atm with cash. Pay by mail. Etc etc.
Using a platform like google to query "how to buy crypto without ID" is enough to land you on a list btw.
I highly suggest you actually learn the basics of crypto -- again not to be a dick-- before buying any or you will likely make a mistake that has the potential to either land you in the hot seat with the IRS or out of whatever money you spent because of a token, network, or recipient wallet error.
