Where's the Beef?

I've been making the most amazing salads over the past 8weeks of my journey with Peps. No beef, no pork, just chicken every now and then and raw fruits and veggies. Let's get a thread going...what are you guys eating? PICS PLEASE!

More seriously, is it “Hong Kong Fu Fu,” the king of kung fu? How do you call him in your country?

I am on the cottage cheese train so hard right now…and the ‘Pickle your own veggies’ train too.

I try to eat some kind of lean meat everyday, but cottage cheese and Greek yogurt are so easy to get down for me….

I grow tired of salads quickly so I have to save them for special dinners or make them bean salads with no lettuce! I do love me some crunchy raw veggies, but have you ever had a homemade pickled carrot stick? Divine.
 
Lotsa different legumes, brown rice, eggs cottage cheese, yogurt, canned tuna/salmon/sardines, chicken breast, chicken liver, spring onions, celery, yellow/red peppers, carrots, parsnips. With food noise fully quelled by reta, I don't crave sweets, chocolate, chips, fast/junk food, processed food or alcohol, so sticking to protein-rich food hasn;t required much or any discipline on my part.
 
In all fairness, I did a lot of salad when on deficit. My daily average target 1200 kcal.

THE LOW CAL/LOW FAT food-
I also made a LOT of "faux" shrimp and chicken gumbo (no roux and just a touch of quinoa) forgive the tomatoes... not on my non-diet recipe.

Chopped salad with cucumber, red/yellow/orange/green bell pepper, red onion, chickpeas, black beans, cottage cheese, the leftover quinoa salad from breakfast, chicken, and steak. (Turns out the steak was a mistake I'm allergic again. 😭 )

I'm supposed to be on a strict high fiber diet so I have been doing a shit ton of cowboy caviar.
 
5am shake
30 g protein,11.5g fiber

9am snack
4oz chicken 35 gram protein

12pm
Varies 30-60 G protein, 8-12g fiber

3pm snack
1/2 cup cottage cheese 13g protein

Dinner
Varies 40-60g protein 8-12g fiber

This meal I believe is around 60g protein
Depending if I’m cutting or gaining I adjust my protein
