The recommended titration schedule from Eli Lilly is 2.5mg weekly for four weeks and upping the dose 2.5mg every four weeks. So, you've been under the recommended protocol since you started. They are trying to make bank off that molecule, so they've put a lot of money into figuring out how best to make it work.
In the first month (even at 2.5mg) it's common to start feeling hungry later in the week before your next dose. This is because the weekly dosing schedule eventually works with the 5-day half-life to reach a plateau of drug concentration after repeated dosing. That plateau or "steady state" doesn't arrive for 4 or so weeks (hence the 4-week schedule for bumping the dose). You're only on your third dose still going up and down, and with so small a dosage, you're going very far down.
Also, peak concentration after a dose can be anywhere from 8 to 72 hours depending on your body. It's not something that you can "pin 0.5mg because I feel hungry NOW" kind of situation. It's not immediate.
Don't try to out-geek the Big Pharma geeks with a DIY titration schedule. I'd pin 0.5-1mg today, consider last Saturday your first dose of your four weeks at 2.5mg. For week 5, assess if you want to bump dose to 5mg. You will be approaching a steady state of concentration and will not be seeing a fluctuation in your appetite because of it. Then do 4 weeks at 5mg to arrive at the steady state for 5mg and assess then if you want to continue or if it's a good level for you.
